Fantastic Chicken Macaroni Salad
1 box tri-color rotini noodles (boil 8-10 minutes or until tender)
1-2 cooled cooked seasoned chicken breasts, cubed (leftovers work well)(cook ~30 mins)
1 can red kidney beans
1/2 can black olives, sliced
12 oz mozzarella or provolone cheese, cut into small cubes
1 each chopped red and/or green bell pepper
Homemade vinaigrette to coat other ingredients well!
1/3 cup Olive oil
1/3 cup Apple cider vinegar
1/4 cup Water
2 cloves Chopped garlic
2 tsp Italian seasoning
1 tbsp Sugar
1 tsp Salt
1 tsp Garlic powder
Black pepper to taste
Cook pasta according to package directions. Drain, set aside to cool. In a large bowl, mix chopped cooked chicken, kidney beans (drained and rinsed), sliced black olives, cubed cheese, and chopped peppers. Stir in cooled pasta (pasta must be cool or cheese will melt). In a separate bowl, wisk together ingredients for vinaigrette. Pour over salad ingredients. Toss until coated. For best results, let sit four hours to overnight in the refrigerator before serving.
